making of aivar 1

It was a beautiful day today, sunny and warm. It was a perfect Sunday afternoon for Aivar making. I missed the grilling part, since it was in the morning.
Anyway, how to make the Aivar is starting from grilling paprikas, 30kg, eggplants, 5kg and tomatoes, 10kg. It is huge package, you need many people to work on it. There were 8-10 people today. Since it takes space, people usually work outside. It was luck my friend's family has a house. After grilling, it is pealing. I missed that part too. I joined from smashing part (photo left). Then, cooking those smashed vegetables for 2-3 hours to evaporate watery part of vegetables(photo right). You need constantly mixing on this huge pot (remember? when I found it in the Ramstore. This is how to use it). It takes a while for a whole process. Today people started to work at 9 in the morning and finished around 6pm. When we are waiting for one person is mixing, the other people are eating lunch and drinking rakija and skopsko (macedonian beer) and chatting. It was very nice and relaxed afternoon.
